Ingredients for 2 servings:
- 2 turkey schnitzels cut into strips
- 3 onions, finely diced
- 3 bell peppers, mixed, cut into strips
- 1 cup(s) rice (parboiled rice), uncooked
- 2 cup(s) meat broth, hot
- 100 g cheese (Emmental), grated
- small can of tomato paste
- 2 tbsp butter in flakes
- 1 pinch(s) of salt and pepper
- Paprika powder

Original name: Pilaf
For cooking, you will need a casserole dish, preferably with a lid (alternatively, cover with aluminum foil). In a pan with a little butter, briefly brown the turkey breast strips on all sides, then season with salt and pepper and set aside. Now roast the diced onions in the pan until translucent. After 3-4 minutes, add the bell pepper strips and fry for another 2-3 minutes. Add the meat to the vegetable mixture and mix everything well. Add half of the vegetable and meat mixture to the buttered casserole dish. Sprinkle the rice on top. Dust the rice with paprika before covering it with the second half of the vegetable and meat mixture. Pour the meat broth over the mixture. Now close the lid or cover the dish with aluminum foil. Bake in the oven at 180°C for approx. 45-60 minutes. After this time, the rice will have absorbed the liquid and is cooked, but still firm to the bite. Now remove the pilaf from the oven and stir in the cheese and tomato paste. Serve with fresh baguette and a crisp salad.
