Ingredients for 4 servings:

  • 1 bell pepper(s), red, roughly diced
  • 1 bell pepper(s), yellow, roughly diced
  • 250 g leek, cut into rings
  • 2 onions, roughly diced
  • 2 tbsp olive oil
  • 250 g rice
  • salt and pepper
  • 1 tsp sweet paprika powder
  • 750 ml vegetable broth, hot
  • 300 g peas, frozen, thawed

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Briefly sauté the peppers, leeks, and onions in hot olive oil in a large pan. Add the rice and sauté briefly. Season with salt, pepper, and paprika. Deglaze with the hot vegetable stock, bring to a boil, and let simmer uncovered over medium heat for 10 minutes. Add the peas and cook for another 5 minutes, until all the water has been absorbed and the rice is tender. Serve with: green salad, baguette, and red wine. Tip: For a spicier twist, add hot paprika.
