Sesame herb rolls

Ingredients for 1 servings:

  • 1 kg wheat flour or spelt flour
  • 1 tsp salt
  • 1 tsp sugar
  • 2 packets of dry yeast
  • 600 ml water, lukewarm
  • 1 egg white
  • 8 tbsp olive oil
  • 4 tbsp herbs, dried
  • 3 tbsp sesame seeds
  • ½ tsp salt
  • some flour for the work surface

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Total time approx. 3 hours

makes 20 pieces

Sift the flour into a bowl and mix with the salt, sugar, and yeast. Slowly add the oil and water and knead everything into a smooth dough. Cover the bowl with a damp cloth and let it rise in a warm place for 2 hours. Preheat the oven to 220°C and dust a baking sheet with flour or line it with baking paper. Knead the dough again on a floured surface and form it into a log. Cut out 20 equal-sized pieces and form them into rolls, placing them on the baking sheet with some space between them (use two baking sheets if necessary). Whisk the egg whites, olive oil, herbs, sesame seeds, and salt in a small bowl and brush them onto the rolls. Bake for 15-20 minutes until golden brown.
