Seychelles banana pie

Ingredients for 12 servings:

  • 750 g banana(s), cut into thin slices
  • 300 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch(s) nutmeg
  • 150 g sugar
  • 150 g butter
  • 2 eggs
  • 250 g flour
  • 1 pinch of salt
  • 1 tbsp, levelled lemon peel, grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Sugary sweet dessert

For the filling, heat the sugar in a saucepan, stirring constantly, until it turns brown and caramelizes. Add the bananas and simmer for about 15 minutes, stirring frequently. Add the nutmeg and vanilla sugar and stir well. Combine all the ingredients for the dough in a bowl and mix well until a sticky dough forms. Spread this dough into a pie dish, gently pressing up the edges. Spread the banana puree on top and place the dish on the middle rack of an oven preheated to 180°C (350°F). Bake for 20-25 minutes, then let the banana pie cool.
