Shepherd's salad with feta cheese

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 1 bunch(s) of cherry tomatoes
  • 2 bell peppers, mixed
  • n. B. Olives, green
  • ½ shepherd’s cheese or feta cheese, approx. 100 g
  • 1 sprig(s) oregano or marjoram
  • 1 small bunch of chives
  • 120 ml rapeseed oil
  • 40 ml olive oil
  • 50 ml balsamic vinegar, lighter
  • 1 pinch(s) of sugar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

light, simple, summery

Cut the cucumber, bell pepper, and feta cheese into approximately 1 x 1 cm cubes and place them in a large salad bowl. Then halve or quarter the cherry tomatoes, depending on their size, and add them to the bowl with the other ingredients. Next, finely chop the herbs and, if desired, chop the green olives a little, and add them as well. Prepare a marinade from rapeseed oil, olive oil, balsamic vinegar, salt, pepper, and sugar.
