Sherry vinegar dressing

Ingredients for 6 servings:

  • 0.1 liter broth, cold
  • 1 tbsp sherry
  • 1 tsp vinegar (sherry vinegar)
  • 1 tsp olive oil
  • 3 tsp oil
  • 1 tsp balsamic vinegar
  • 1 tsp mustard, hot
  • 2 tsp oil (walnut oil)
  • 1 shallot(s)
  • salt and pepper
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the cold stock with the sherry, salt, pepper, sugar, and mustard. It’s best to use a blender for this. Gradually add the vinegar. Finely dice the shallot. Now slowly add the oils, a little at a time, while blending continuously. When the dressing has reached a pleasant consistency, finally add the chopped shallots.
