Shortbread cookies

Ingredients for 1 servings:

  • 250 g butter
  • 250 g sugar
  • 2 packets of vanilla sugar
  • 3 egg yolks
  • 1 lemon(s) or orange, grated peel
  • 500 g flour
  • 2 tsp, leveled baking powder
  • 1 tbsp milk
  • Grease for the tray
  • e.g. chocolate, melted

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cream the butter until fluffy. Gradually add the sugar, vanilla sugar, egg yolks, and lemon or orange zest. Sift the flour with the baking powder and mix thoroughly. Then, a tablespoon at a time, add the milk to the mixture. Caution: Depending on the type of flour, the mixture may become quite firm before the flour is fully incorporated. Reduce the amount of flour if necessary. Grease a baking tray. Prepare the dough as usual for shortbread cookies and place them on the baking tray. Bake the shortbread cookies in a preheated oven at 175°C – 200°C (top/bottom heat) for about 15 minutes. Then dip half of the cookies in melted chocolate and let cool. Tip: This recipe makes quite a few cookies, so if it’s only for three people, or something similar, it’s better to make only half!
