Knead everything, except the chocolate coating, into a dough and chill slightly. Roll out long, approximately 3 cm wide dough snakes and cut 4 to 5 cm long pieces from them. Shape one end into a point for the nose. Use clean scissors to cut the ears and spines into the back. Bake at 180°C for 13 to 15 minutes, until the hedgehogs are light brown but not too dark. Melt the chocolate coating in a water bath. Once cooled, coat the spines with the chocolate coating, lightly dab the ears, and use a toothpick or similar tool to dab on the eyes and a nose.
