super great cookies, makes about 40 pieces

Melt the chocolate and let it cool. Beat the butter and sugar in a bowl until light and fluffy. Gradually add the egg and mix well. Sift in the flour and knead everything into a soft dough. Place half of the dough in a second bowl and mix with the melted chocolate. Mix the lemon zest with the other half of the dough. Roll out the two halves of the dough on a lightly floured surface into two equal rectangles, ideally placing each piece between two layers of baking paper. Place the lemon dough on top of the chocolate dough, place both on a layer of baking paper, and roll tightly using the paper to help you do this. Place the roll in the refrigerator and let it cool. Grease and flour several baking sheets. Cut the roll into approximately 40 slices. Place the slices on the prepared baking sheets and bake at 175°C (fan-assisted, preheated) for about 10-12 minutes until golden brown. Cool completely on a wire rack before serving.
