Ingredients for 3 servings:

  • 300 g shrimp(s)
  • 3 large tomatoes (vine tomatoes)
  • 2 onions
  • 200 g mushrooms, fresh
  • 2 cloves garlic
  • ½ jar Spanish green pitted olives
  • 250 ml white wine
  • 2 tbsp mixed herbs (frozen)
  • olive oil
  • salt and pepper
  • chili
  • 300g tagliatelle
  • salt water

First, cut the shrimp into bite-sized pieces and set aside. Dice the tomatoes and onions, and slice the mushrooms and olives, and set aside. Finely dice the garlic. Heat a generous splash of olive oil in a pan (use enough olive oil to allow the garlic cubes to “fry”) and add the garlic cubes. Then add the onions and shrimp pieces and fry briefly, then deglaze with the white wine. Add the diced tomatoes, mushrooms, and sliced ​​olives and simmer. Meanwhile, cook the tagliatelle in plenty of salted water until al dente. Once the sauce is thick, season it with salt, pepper, chili, and the herb mixture, then toss it with the pasta. Serve with a mixed green salad and a glass of the white wine used for the sauce.
