Sicilian orange salad

Ingredients for 4 servings:

  • 4 oranges
  • 1 onion(s)
  • 10 olives, black
  • 4 tbsp olive oil, good
  • 1 bunch parsley, flat
  • Salt
  • Pepper (from the mill)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Orange salad

Peel the oranges and remove the bitter white pith. Thinly slice the oranges and remove the seeds. Finely dice the onion and finely chop the parsley. Pit the olives. Drizzle the orange slices with olive oil and season with salt and freshly ground pepper. Sprinkle the diced onion, parsley, and olives (whole or sliced, to taste) over the oranges and refrigerate for at least 40 minutes. A resounding success on a warm summer evening in 2004 (at a southern buffet).
