Ingredients for 1 servings:

  • 500 g Flour Type 00
  • 50 g sugar
  • 12 g ammonium bicarbonate
  • 75 g lard
  • some baking powder
  • 2 m.-sized eggs
  • 1 lemon(s), zest
  • 125 ml milk
  • 250 g powdered sugar
  • 25 ml water
  • some lemon juice

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Sift the flour into a bowl and add the sugar, baking powder, lemon zest, lard, and eggs. Knead the dough, gradually adding the milk until it forms a smooth dough. Let the dough rest briefly. In the meantime, preheat the oven to 180°C (fan oven). Knead the dough again and divide into 40g pieces. Roll these into sausages, then halve these again and twist or braid them into a wreath. Place the pastries on a baking tray lined with baking paper and bake at 180°C for 15 minutes until golden brown. For the glaze: Mix the icing sugar with water and a little lemon juice to form a stiff glaze and brush the pastries with it while they are still warm. The pastries will keep for 3-4 days.
