Sicilian vegetable salad, lukewarm

Ingredients for 8 servings:

  • 1 kg potatoes
  • 750 g bell pepper(s), colored
  • 1 kg tomatoes
  • 500 g vegetable onions
  • 200 ml olive oil
  • 1 bunch of parsley
  • salt and pepper

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 25 minutes

Bobbia

Peel and quarter the potatoes. Quarter the bell peppers and cut into pieces. Peel the tomatoes and cut into sixths. Quarter the onion lengthwise and slice into strips. Place everything in a pot, season with salt and pepper, and drizzle with oil. Cook over low heat for about 45 minutes. Remove with a slotted spoon. Let the stock reduce for another 10 minutes and pour over the vegetables. Serve lukewarm.
