Side Dish: Grapes – Sauerkraut with Smoked Bacon and Onions

The perfect side dish: grapes – sauerkraut with smoked bacon and onions recipe with a picture and simple step-by-step instructions.

  • 1,5 kg Sauerkraut
  • 3 piece Bay leaves
  • 1 tbsp Vegetable broth powder
  • Homemade
  • 300 g Diced smoked bacon
  • 4 medium sized Diced onions
  • 1 size Cup of grapes
  • Cored and halved
  • 0,5 liter Apple juice
  1. Put the sauerkraut in the wok, pour the vegetable stock over it and pour the apple juice on it, close with a lid and bring to the boil.
  2. In the meantime, I’ve washed and pitted the grapes. Then add these to the sauerkraut, add the bay leaves and let them cook.
  3. Now cut the bacon … and peel the onions … in the meantime the bacon can be left out in the pan … then cut the onions into small pieces and add to the bacon, sear everything well and add to the sauerkraut . Stir well and let cool down on the balcony overnight.
  4. If you like, you can season with salt & pepper, my vegetable stock is spicy enough and so I don’t have to season much.
  5. Tip 5: I made the sauerkraut the day before, then I was allowed to sleep on the balcony ;-))) Sauerkraut just tastes better when it goes through the night.
