Side Dishes: Swabian Potato Salad with Rocket

- 10 small Boiled jacket potatoes
- 1 Chopped onion
- 1 tsp Vegetable broth *
- 1 tbsp Old master vinegar
- 1 size Cup of water
- Salt pepper

- Oil of choice and taste
- 1 handful Arugula salad
- Briefly bring the spices to the boil with the water in a saucepan and allow to cool again.
- In the meantime, peel the boiled potatoes, cut them into slices and place them in a bowl.
- Then sort, wash and roughly cut the lettuce, set aside.
- Pour the cooled brew over the potato slices, add a good dash of oil and stir everything well.
- The salad should stand for a few minutes, add salt if necessary …
- Just before serving, the rocket is mixed with the potato salad.
