Ingredients for 1 servings:
- 125 g spelt flour (wholemeal spelt flour)
- 1 tbsp sugar
- 60 g butter, room temperature
- 1 tsp lemon zest, grated
- 400 g jam (quince jam)
- 1 tbsp liquid honey
- 40 g mango(s), dried, chopped
- 2 tbsp cornstarch
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes
Pure quince, barely sweetened
Preheat oven to 180°C (top/bottom heat). Combine the ingredients for the dough and refrigerate briefly while you prepare the topping. Whisk together the liquid honey with the quince puree, cornstarch, and mangoes. Roll out the dough and place it in a 20 cm diameter tart pan. Pour in the topping and smooth it down. Bake in the oven for about 35-40 minutes.
