Simple apricot tart

Ingredients for 1 servings:

  • 90 g cornstarch
  • 90 g flour
  • 1 tsp baking powder
  • 150 g butter
  • 100 g sugar
  • 3 eggs, separated
  • 1 tbsp vanilla sugar
  • 1 lemon(s), the peel and the juice
  • 600 g apricot(s), halved and pitted
  • 50 g sugar
  • 3 egg whites
  • 100 g powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with meringue

Cream the butter with sugar and vanilla sugar until fluffy. Gradually add the egg yolks, grated lemon zest, and lemon juice, and mix well. Combine the flour and cornstarch with the baking powder and mix into the meringue mixture. Fold in the stiffly beaten egg whites. Pour into a greased and floured tart pan and bake for 10 minutes in a preheated oven at 180°C. Remove from the oven, top with the apricot halves, and sprinkle with 50g of sugar. Bake for another 20 minutes. Beat the egg whites with powdered sugar, coat the apricots, and bake for another 10-12 minutes, until the meringue is golden brown.
