Ingredients for 6 servings:
- 5 rolls
- 2 slices of farmhouse bread, 1.5-2 cm thick
- 500 g quark, 40%
- 4 large eggs
- 1 large onion(s), diced
- 1 bunch of parsley
- salt and pepper

Makes 12-14 dumplings, depending on size. Cut the bread and rolls into small cubes and place in a bowl. Add the onions, quark, eggs, and parsley and mix everything thoroughly. Season with salt and pepper. Form even dumplings (it’s easier with slightly damp hands). Place in boiling salted water. Reduce the heat to low and let the dumplings simmer for 20-25 minutes, but do not let them boil. Tips: Goes well with all meat dishes and plenty of sauce. With mushrooms, they make a delicious main course. They freeze perfectly when cooled. Slice them cold, cut them into slices, fry them in butter, and serve with salad. They’re also great for making a casserole. The bread and rolls can be fresh!
