Simple bread soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 400 g bread(s), stale
  • 4 tbsp butter
  • 2 liters of vegetable broth or meat broth
  • Salt
  • pepper
  • 1 bunch of chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Grandma’s way

Peel and dice the onion and garlic clove. Dice the bread. Sort the washed chives and cut them into small rings. Melt a tablespoon of butter in a pan. Sweat the onion and garlic until translucent, then remove from the heat. Melt the remaining butter in a large saucepan and brown the bread cubes on all sides. Then add the onion and garlic. Heat the meat or vegetable stock and carefully pour it over the bread. Season to taste with salt and pepper and let it simmer for just a short time. Ladle the soup into a soup tureen or onto plates, sprinkle with the chives and serve.
