Simple grain bread

Ingredients for 1 servings:

  • 6 eggs
  • 450 g quark
  • 2 tsp salt
  • 1 packet of baking powder
  • 300 g oat bran
  • 4 tbsp flaxseed
  • 4 tbsp sunflower seeds
  • 4 tbsp pumpkin seeds
  • 150 g carrot(s), grated
  • 100 g walnuts, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

for a 30 cm loaf pan, without yeast and flour

Mix all the ingredients together and knead into a dough using a dough hook (if you don’t have a dough hook, just mix well with a tablespoon). Transfer to a loaf pan lined with baking paper (I use a 30 cm long and 11 cm wide one). Then bake on the middle rack of an oven preheated to 180 degrees Celsius (350 degrees Fahrenheit) for 60 minutes. The bread is wonderfully moist and keeps for a week without going dry. I simply store it in the baking paper. You can also store it in a jute bag in the fridge. I had to crack and chop the nuts myself. This was the most time-consuming part, as I don’t have a device for it. The rest goes quickly.
