Simple pasta with beef sauce
- 200 g Corkscrew – pasta
- Salt
- 1 Shallot
- 1 Clove of garlic, smoked
- 90 g Lardo Erbe e flori (or pancetta)
- 1 small pole Celery
- 1 Beefsteak tomato
- 2,3 Twigs Spice thyme (garden)
- 1 branch Rosemary (garden)
- 200 g Ground beef
- 50 ml Red wine
- Gourmet pepper
- Hard grated cheese to taste
preparation
- Put on a saucepan with salted water and later cook the corkscrews in it according to the instructions. Drain / let drip and return to the pot. Dice lardo e flori (or pancetta). Peel shallot and clove of garlic, chop up in a lightning chopper. Scald the beefsteak tomato with hot water, remove the skin from the stalk and also dice. Chop the celery into small pieces.

- Put the diced lardo e flori (pancetta) in a pan and fry without oil or fat. Add the roughly chopped shallot, garlic and herbs. Let it stew. Then add celery and stew. Now add the minced beef and fry until crumbly.
- Then deglaze the whole thing with the red wine and reduce the liquid a little. Finally add the diced beefsteak tomato and season with salt and gourmet pepper. Shift down and let simmer for a few minutes.
Serving
- Fold the drained corkscrews into the beef sauce and simmer for 2 or 3 minutes. Then take two deep plates and pour them into them. Spread over the top with freshly grated hard cheese to your liking. Garnish with a basil leaf.
