Simple spinach wrap

Ingredients for 1 servings:

  • 400 g leaf spinach, frozen
  • 2 eggs, size M
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Defrost the spinach leaves in a pot or in the microwave on high for 7-10 minutes. Then place the spinach in a sieve and press out the water with a fork or simply squeeze it out in portions with your hands. Mix the squeezed spinach with the eggs and season with salt, pepper, and other seasonings if desired. Spread the mixture thinly on a large baking tray and bake at 180°C (convection oven) for approx. 10-15 minutes. Remove the wrap, let it cool briefly, and top with your favorite toppings. Divide the sheet in half to make two smaller wraps, or roll it up into a large roll. Personal favorite: Top with lettuce, tomatoes, cream cheese, and smoked salmon. The whole tray contains approx. 290 kcal.
