Simple zucchini salad

Ingredients for 4 servings:

  • 500 g zucchini
  • 5 tbsp olive oil
  • 2 tbsp vinegar (white wine vinegar)
  • 1 garlic clove(s)
  • 3 tbsp parsley, chopped
  • salt and pepper
  • 1 pinch of chili powder

Wash the zucchini and pat dry, removing the stem and flower buds. Then cut into approximately 1 cm thick slices. For larger zucchini, halve the slices further. Heat 3 tablespoons of olive oil in a large pan and fry the zucchini for about 5 minutes, until lightly browned. Transfer the vegetables to a bowl. Mix the remaining olive oil with the vinegar, crushed garlic, parsley, salt, pepper, and chili powder. Toss the zucchini with the marinade and let it cool completely.
