Slaughter Plate with Tongue …
The perfect slaughter plate with tongue … recipe with a picture and simple step-by-step instructions.
Mashed potatoes:
- 6 size Roughly diced potatoes
- 1 teaspoon Salt
- 1 Bit From an onion
- 1 Bit Of a clove Of garlic
- Water
- 40 g Branded butter
- 250 ml Boiling milk
- Freshly grated nutmeg
Sauerkraut:
- 1 tablespoon Sunflower oil
- 50 g Bacon slices
- 2 Onions
- 1 Can Wine sauerkraut
- 2 Bay leaves
- 13 Juniper berries squeezed
- 1 teaspoon Caraway seed
- 100 ml Good meat broth
Also:
- 4 Discs Pork tongue cooked
- 2 piece Homemade black pudding
- 2 piece Selfmade liver sausage
- Puree: Boil the potatoes with salt, onion and garlic in the water for 20 minutes, drain and first mash with boiling milk, a little salt and butter, then stir with a whisk until foamy, season with freshly grated nutmeg. Finished!
- For the sauerkraut, cut the bacon slices into cubes, halve the onions and then cut into slices; Lightly squeeze the juniper berries with a large knife and place the sauerkraut in a sieve. Rinse with a little water and then let it drip off (this way it doesn’t get so sour and it tastes nice and mild afterwards).
- Lightly fry the bacon cubes in the heated oil, sauté the onion slices until translucent and add the bay leaves, juniper berries and caraway seeds, as well as the slightly torn sauerkraut and the broth. Mix thoroughly with a fork. Then cook everything with the lid on for about 45 minutes.
- During this time, mix again with a fork and, if necessary, add a little more stock so that the sauerkraut does not stick. Then remove the bay leaves. Finally, put your tongue on the cabbage and briefly heat it there.
- I heated the sausages separately in boiling hot water, I had such an unpleasant experience: times ago a sausage in sauerkraut popped open, which was not a nice sight. Since then, I’ve preferred to heat them separately.
- Back to my slaughter plate: arrange the puree with the sauerkraut on plates and add a black sausage and a liver sausage with two slices of tongue. Good Appetite!!
