Ingredients for 4 servings:

  • 500 g pork fillet(s)
  • 2 tbsp flour
  • 3 slices of toast
  • 30 g clarified butter
  • ½ cup whipped cream
  • 1 egg yolk
  • 8 tbsp dry sherry
  • 1 onion(s)
  • 250 g mushrooms
  • ½ lemon(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the fillet into wafer-thin slices and dust lightly with flour. Brown in batches in a large pan, then remove. Sauté the diced onion in hot fat, add the mushrooms, fry for 5 minutes, then remove. Whisk 2 tablespoons of cream with the egg yolk. Deglaze the pan juices with the remaining cream and bring back to a boil. Stir the egg yolk cream into the simmering sauce, season with salt, pepper, and lemon juice. Fold in the meat and mushrooms, transfer to an ovenproof dish, crumble the bread into small pieces, and lightly coat with sherry. Spread over the strips and bake in a preheated oven at 200°C for 20 minutes.
