  • 500 g turkey breast
  • 2 g butter
  • 1 onion(s)
  • 250 g chanterelles
  • Salt

  • ⅛ liter white wine
  • 250 g sour cream
  • 150 g whipped cream
  • 1 pinch(s) of sugar
  • 2 tsp mustard (Dijon mustard)
  • 2 sprigs of tarragon, fresh

Halve the turkey breast lengthwise and cut into thin strips across the grain. Melt the butter in a large pan and sear the meat until golden brown. Peel and finely chop the onion. Clean the mushrooms, rinse them in a sieve, drain well, and add them to the meat along with the onion. Sauté, season with salt, and pepper. After a few minutes, deglaze with the white wine. Add the sour cream and cream and simmer until the sauce is creamy. Season with mustard, sugar, salt, and pepper. Finely chop the tarragon leaves and stir into the minced meat before serving. Serve with pasta or hash browns as a side dish.
