Ingredients
peel, cut, blanch:
- 2 Pc. Spring onions fresh, cut
- 2 Pc. White asparagus spears
after blanching on the asparagus!
- 1 shot Lemon juice
fry:
- 0,75 Pc. Diced onion
- 30 g Streaky bacon
- 200 g Sliced turkey
- Spice mix
cut into roses, into the water:
- 5 Pc. Radish
Vinaigette:
- 1 teaspoon Mustard
- 0,25 Pc. Diced onion
- 1 pinch Salt and pepper
- 1 Cutlery spoon Vinegar
- 2 Cutlery spoon Rapeseed oil
- 1 pinch Sugar
Decorate:
- 0,5 packet Raspberries fresh
Instructions
Radishes:
- Wash cut, put in cold water so that they open.
Spinach + spring onion:
- Chop the spring onions, wash everything and drain.
Vinaigrette :
- Put 1 / 4 onions in the vinaigrette,
- Put the spinach and spring onions in the vinaigrette. Put on a plate as a base.
Asparagus:
- Peel, cut diagonally, blanch, quench. Sprinkle lemon juice on top of the spinach.
Spice mix:
- Consists of: fennel seeds anise seeds cloves whole Szechuan - pepper star anise cinnamon blossom
Flesh :
- Fry the onion, bacon and meat, season and distribute.
Decorate:
- With the radishes - roses (salt) and raspberries.
