Slovak Liwanza

Ingredients for 4 servings:

  • 150 g flour
  • 1 cube of yeast
  • 1 pinch of salt
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 2 large eggs
  • 20 g butter, liquid
  • n. B. Lemon(s), grated peel
  • 150 ml milk, lukewarm
  • 100 g jam
  • 1 tbsp rum
  • e.g. cinnamon
  • 1 cup sour cream
  • 2 tbsp sugar
  • e.g. lemon juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sift flour into a bowl and stir in the yeast. Add salt, sugar, vanilla sugar, eggs, butter, and lemon zest. Mix all ingredients together and gradually add the milk. Beat the dough until it bubbles. Let it rise in a warm place until it doubles in size. Grease the Liwanzen pan and heat it gently. Place a tablespoon of batter into each well of the pan and bake either in the oven at 180°C for 2 minutes or on the stovetop at medium heat on both sides. For the filling, mix plum jam or jam with rum and a little cinnamon, if desired. Spread the filling over the Liwanzen and place two Liwanzen together. Mix the sour cream with powdered sugar and lemon juice. Sprinkle the Liwanzen with sugar and garnish with the sour cream. Tip: If you don’t have a Liwanzen pan, use a regular pan, melt butter, and add 2 tablespoons of batter. They won’t be quite as round this way, but they taste just as good!
