Slow Cooker Irish Stew

Ingredients for 4 servings:

  • 1 liter of juice (vegetable juice)
  • 6 medium-sized potatoes, peeled, roughly diced
  • 6 carrots, peeled, roughly diced
  • 4 stalk(s) celery, cut into pieces
  • 2 onions, peeled, finely chopped
  • 3 cloves garlic, squeezed or finely diced
  • 2 kg lamb with bone
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Add all ingredients to the slow cooker in order. Either cook the lamb whole or remove it from the bone and dice it into the liquid (be sure to add the bones, as they add a wonderful flavor). Season to taste with salt, pepper, and sugar. Then cook on LOW for about 8-9 hours. At the end of the cooking time (if the lamb was cooked whole), remove it from the slow cooker, remove it from the bone, and return it to the slow cooker in small pieces. Thicken further, if necessary.
