Small Apple Crumble Cake
The perfect small apple crumble cake recipe with a picture and simple step-by-step instructions.
for the dough:
- 65 g Soft butter
- 90 g Sugar
- 1 packet Vanilla sugar
- 1 Pc. Egg
- 145 g Flour, preferably type 630 spelled
- 1 tsp Baking powder
- 1 pinch Salt
- 80 ml Milk
- 25 g Raisins as desired
- 3 Pc. Sour apples
for the crumble:
- 80 g Flour, preferably type 630 spelled
- 1 tsp Cinnamon or apple pie spice
- 40 g Cold butter
- 70 g Brown sugar
- First, for the crumble, grate the flour, cinnamon and butter between your fingers until finely crumbly. Then mix in the sugar. Chill the streusel until you are ready to use it again.
- For the dough, beat the butter, sugar and vanilla sugar with the whisk of the hand mixer on the highest setting until frothy. Add the egg and continue beating to a light yellow frothy mass.
- Mix the flour, baking powder and salt in a bowl and briefly stir into the egg mixture on a low level, alternating with the milk. Fold in raisins if necessary. Pour the dough into a greased and floured springform pan (20 cm diameter).
- Peel and quarter the apples, remove the core and cut into fine wedges. Spread over the dough like a roof tile. Spread the sprinkles on top.
- Bake in the preheated oven at 175 degrees top / bottom heat (or convection 160 degrees) for about 45 – 55 minutes on the middle rack.
