Low carb, incredibly easy
Simply mix eggs, sweetener, and cream cheese and fry small blobs in a pan with a little oil. In my opinion, this is the most delicious low-carb pancake recipe, even if the list of ingredients sounds absurd. To save calories, I use low-fat cream cheese. The recipe can be sweetened with sweetener, cinnamon, cocoa powder, etc. The pancakes also taste delicious with a little salt, pepper, and herbs; you could even use herb cream cheese here.
