Snail Soup Baden Style
The perfect snail soup baden style recipe with a picture and simple step-by-step instructions.
- 1 piece Clove of garlic
- 20 gr Butter
- 2 piece Shallots
- 1 piece Leeks small
- 0,5 piece Carrot
- 100 gr Celery bulb
- 38 piece Roman snails
- 1 ltr Meatsoup
- 6 tbsp Sour cream
- 0,25 ltr Dry white wine
- Salt, pepper from the mill
- Some chervil and chives
- 2 piece Egg yolk
- Halve the garlic cloves and rub the saucepan with them, melt the butter and sweat the chopped vegetables in it until translucent. Halve the snails and sweat them in the vegetables as well, then pour in the broth and season with salt and pepper.
- Finally pour in the finely chopped herbs, cream and white wine, then beat 2 egg yolks with a little broth and add to the warm soup. Then season again to taste and serve.
