Snowballs with Blueberries in Vanilla Sauce
The perfect snowballs with blueberries in vanilla sauce recipe with a picture and simple step-by-step instructions.
For the snowballs:
- 6 piece Protein
- 1 tablespoon Sugar
For the vanilla sauce:
- 1 liter Milk
- 6 piece Egg yolk
- 1 packet Custard powder
- 1 piece Vanilla pod
For the blueberries:
- 600 g Blueberry
- 1 packet Custard powder
- 1 packet Vanilla sugar
The snowballs
- Beat the egg whites and the sugar into an egg white. Then heat the milk in a saucepan and take it off the stove just before it boils over. Now prick small balls from the egg whites with two tablespoons and briefly add them to the hot milk. After just 30 seconds, take it out again and place on a sieve to drain and cool. Repeat this process until all of the egg whites are used up.
The vanilla sauce
- Now use the hot milk for the vanilla sauce. To do this, add the vanilla pod to the milk, bring it to the boil and then remove it from the milk again. Scrape the vanilla pulp from the pod and add to the milk. Then add the vanilla pudding powder and the vanilla sugar.
- Let the finished vanilla sauce and the snowballs cool separately in the refrigerator.
The blueberries
- Heat the blueberries together with the juice in a saucepan and add the vanilla pudding powder and the vanilla sugar. Stir well until a pulpy mixture is formed. Then remove the berries from the heat.
- To serve, pour the cold vanilla sauce into a deep plate. Give a small mountain of warm blueberries to the right and left and place the snowballs in the middle between the two blueberry mountains.
