Snowed in Apple Pockets

dough

  • 250 g Butter
  • 200 g Powdered sugar
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 2 Eggs
  • 500 g Flour

filling

  • Apple jelly
  • 50 g Chopped almonds
  • 50 g Desiccated coconut
  • 2 teaspoon Lemon juice

Topping

  • Apple jelly
  • Desiccated coconut
  1. Put the butter, powdered sugar, vanilla sugar, salt and eggs in a bowl. Add the flour and knead the ingredients well. Wrap the dough in foil and refrigerate for a while.
  2. For the filling, mix the apple jelly with the almonds, desiccated coconut and lemon juice.
  3. Roll out the cooled dough thinly (ideally between cling film) and cut into small squares. Place a teaspoon of the filling on the square. Fold the squares together at corners so that triangles are formed and the edges are pressed down well.
  4. Place the apple turnovers on a baking sheet lined with baking paper.
  5. Baking time: about 15 minutes at 180 degrees
  6. Finally, heat the apple jelly, brush the apple pockets with it and immediately sprinkle with desiccated coconut.
