Soaked Lemon Cake

The perfect soaked lemon cake recipe with a picture and simple step-by-step instructions.

  • 250 g Butter
  • 250 gr Sugar
  • 5 piece Free range eggs
  • 2 piece Lemon peel
  • 250 g Flour
  • 1 pinch Salt
  • 2,5 tsp Baking powder with saffron
  • 0,5 piece Freshly squeezed lemon juice

Cast 1

  • 100 g Powdered sugar
  • 2 dl Freshly squeezed lemon juice

Variant 2 cast

  • 60 g Powdered sugar
  • 2 dl Limoncello with alcohol
  1. Beat the butter and sugar until frothy
  1. Add the eggs and 2 lemon zest and the juice of half a lemon
  1. Mix the flour, baking powder with saffron and a pinch of salt into the mixture and place in a 30cm cake tin
  1. Pre heat the oven to 180 degrees celcius
  1. Bake at 180 degrees for about 60-65 minutes. Let it cool a little in the tin and pierce the cake several times with a knitting needle and soak with Varainte 1 or 2 as long as the cake is still warm.
