Soba noodles with Thai peanut sauce

Ingredients for 2 servings:

  • 250 g soba noodles
  • ½ bunch spring onion(s), the green part
  • 1 handful of peanuts
  • 3 tbsp peanut butter
  • 3 tbsp soy sauce
  • 1 tsp ginger
  • 1 tsp Sriracha sauce
  • 2 garlic cloves
  • ½ bunch spring onion(s), the white part
  • 150 ml vegetable stock

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Slice the spring onions and set the green part aside. Blend the white part with the remaining sauce ingredients in a blender until smooth and bring to a boil in a small saucepan. Meanwhile, bring a sufficient amount of water to a boil in a large pot and cook the noodles for 6 minutes until al dente. Drain in a colander and rinse with cold water. Transfer to a large bowl with the sauce and mix well. Season with soy sauce and serve garnished with the green spring onion rolls and peanuts.
