Soups & Stews: Yellow Zucchini Soup

The perfect soups & stews: yellow zucchini soup recipe with a picture and simple step-by-step instructions.

  • 2 yellow Zucchini fresh
  • 0,5 liter Vegetable broth
  • 1 cups Alpro soy
  • Salt pepper
  • Nutmeg from the mill
  1. Wash and dry the zucchinis.
  2. Then cut into slices on a slicer and bring to a boil in the vegetable stock.
  3. Puree with a mixer, stir in ½ cup of Alpro Soya (I didn’t need everything). Now only season with salt, pepper from the mill and freshly grated nutmeg and the soup is ready.
