Soups & Stews: Yellow Zucchini Soup
The perfect soups & stews: yellow zucchini soup recipe with a picture and simple step-by-step instructions.
- 2 yellow Zucchini fresh
- 0,5 liter Vegetable broth
- 1 cups Alpro soy
- Salt pepper
- Nutmeg from the mill
- Wash and dry the zucchinis.
- Then cut into slices on a slicer and bring to a boil in the vegetable stock.
- Puree with a mixer, stir in ½ cup of Alpro Soya (I didn’t need everything). Now only season with salt, pepper from the mill and freshly grated nutmeg and the soup is ready.
