Soups: Tomato and Lentil Soup INDIA

- 1 kg Vine tomatoes – quarter, roughly dice
- 2 Solo garlic – finely chopped
- 1 Chopped onion
- 1 Red chilli pepper – finely chopped
- 2 tbsp Butter
- 0,5 tsp Turmeric
- 1 tsp Garam Marsala
- 1 tsp Ground cumin
- 600 ml Vegetable broth
- 300 ml Coconut milk
- 175 g Lentils red
- 2 tsp Lemon juice
- Salt
- White milled pepper
- 2 tbsp Finely chopped coriander
- Heat the butter in a saucepan, fry the onion and garlic in it. Add the chilli, turmeric, garam marsala and cumin and sauté.
- Add the tomato cubes and stir-fry for about 2 minutes. Deglaze with the vegetable stock and coconut milk, add the lentils and lemon juice and bring to the boil.
- Simmer over low heat for about 20 minutes, season again and serve sprinkled with fresh coriander
