Ingredients for 5 servings:

  • 500 g beans, white
  • 1 m.-sized onion(s)
  • 100 g bacon
  • Water
  • bay leaves
  • Carnation(s), whole
  • Vinegar
  • Butter or oil
  • Flour
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 30 minutes; Total time approx. 8 hours 45 minutes

delicious as a stew or as a sauce for spaetzle

Soak the beans in cold water overnight. Then cook the beans with the soaking water, cloves, and bay leaves until tender. Sauté the onions and bacon in butter or oil and thicken with flour. Let them brown slightly. Then pour in a little water and bring to a boil briefly. Now add the beans and the soaking water. Stir well to avoid lumps. The stew should now be light to quite creamy. Season with salt and pepper. Finally, add a generous splash of vinegar to give the stew a little acidity. Depending on your taste, you can serve the stew with bread as a side dish, or you can serve it with spaetzle.
