Pork medallions in herb garlic with buttered vegetables

Ingredients for 2 servings:

  • 300 g pork medallions
  • 300 g vegetables, e.g. peas, carrots and cauliflower or to taste
  • 1 bunch garden herbs, mixed, alternatively frozen
  • 1 cup of cream
  • 1 clove(s) garlic
  • 1 onion(s)
  • 2 baguettes for baking
  • 1 corner(s) of herb butter
  • some water
  • some oil
  • herbal salt
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cut the vegetables into pieces, add them to a pot with a little water and some herb butter, and simmer. Grate the garlic, chop the onion, and mix both together with the herbs and a dash of oil. Season with herb salt and pepper. Toss the pork medallions in the herb sauce and let them simmer for a while. Meanwhile, slice the baguettes lengthwise, spread with a little herb butter, and bake in the oven according to the package instructions. Brown the pork medallions, gradually adding the cream. Season again with herb salt and pepper, and simmer. Croquettes are also delicious with this dish instead of bread.
