Ingredients for 2 servings:

  • 300 g well-smoked ham, e.g. Black Forest
  • 500 ml milk
  • 100 g butter for frying and for the sauce
  • 30 g flour
  • pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 20 hours; Cooking/baking time approx. 20 minutes; Total time approx. 20 hours 40 minutes

It’s best to have the butcher slice the ham 2-3 fingers thick. Soak the ham in the milk overnight. If the ham has a rind, remove it and add the rind. Soaking is a must; this allows the ham to impart its flavor to the milk. Brown the ham with the butter in a deep frying pan or large pot. Remove the ham. Thicken the butter with the flour and add the milk, stirring with a whisk, until you have a nice sauce. Now season with pepper. You don’t need salt, there’s enough in the ham already. Add the ham back to the sauce and serve. Potatoes go best with it. A must for any sauce fan.
