Sour kidneys

Ingredients for 4 servings:

  • 6 pork kidney(s)
  • 4 tbsp oil
  • 1 large onion(s)
  • 200 g sour cream
  • Vinegar
  • Flour
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes

Mashed potatoes go particularly well with this

Thoroughly remove the calyces and tendons from the kidneys and soak them overnight several times. (Pour plenty of cold water over them, let them stand, drain, and then re-soak them. Repeat this process about four times.) Briefly rinse the kidneys under running water and pat dry. Then cut them into large cubes and fry them in a hot pan with oil. Chop the onions and add them. Sauté everything over medium heat for 10 minutes. Add the sour cream. Mix the flour with water and add enough to make a sauce. Season with vinegar, salt, and pepper. (Be careful with the vinegar. It’s best to add it a tablespoon at a time.)
