Sour sausages with gravy

Ingredients for 4 servings:

  • 1 liter of water
  • 100 ml vinegar
  • 4 onions
  • 5 bay leaves
  • 7 juniper berries
  • 50 g sugar
  • 4 pairs of bratwurst or Nuremberg bratwurst
  • 2 tbsp butter
  • 1 tbsp flour
  • salt and pepper
  • Sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Bring the water, vinegar, sugar, and spices to a boil. Peel the onions, halve them, and thinly slice them; add them to the broth; and simmer gently for about 15 minutes. Heat the butter in a saucepan, add the flour, and stir to make a roux. Stir this into the broth shortly before the end of the cooking time. Let the sausages simmer in the broth over low heat until cooked through. Season with salt, pepper, and sugar. It tastes better if it sits for a few hours. Serve with boiled potatoes or farmhouse bread.
