Ingredients for 4 servings:

  • 2 onions
  • Carrot(s)
  • 1 liter of water
  • 1 cube of broth (clear soup with vegetables)
  • 125 ml vinegar (white wine vinegar)
  • 250 ml white wine (Riesling)
  • 2 bay leaves
  • 2 grains allspice
  • 1 pinch(s) of sugar
  • Pepper, freshly ground
  • 24 sausages (Nuremberg bratwurst)
  • some horseradish
  • Parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Franconian specialty

Peel the onions, wash and trim the carrots. Thinly slice both. Bring water to a boil and dissolve the clear broth in it. Add the vinegar, white wine, bay leaves, allspice berries, sugar, and vegetables. Cover and simmer for about 10 minutes. Add the Nuremberg sausages and let them simmer over low heat for about 10 minutes. Season the broth with horseradish and pepper. Garnish with parsley. Serve with farmhouse bread.
