Souvlaki with tomato salad

Ingredients for 4 servings:

  • 700 g pork schnitzel
  • 2 onions
  • 2 spring onions
  • ¼ pot oregano
  • 2 cloves garlic
  • 11 tbsp olive oil
  • 1 tsp pepper, coarse, mixed
  • Salt
  • 5 tbsp lemon juice
  • 1 tbsp honey
  • 8 tomatoes
  • 250 g cheese (Halloumi grilled cheese)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Dice the meat. Peel and halve the onions. Cut the onions into strips and the spring onions into pieces. Thread the prepared ingredients onto 4 skewers. Cut the oregano into strips and the garlic into slices. Mix both with 8 tablespoons of oil. Season. Pour half of the oil over the skewers. Mix the lemon juice with the honey. Whisk in the remaining oil mixture. Slice the tomatoes and cheese. Fry the skewers in 2 tablespoons of hot oil for 6-8 minutes, turning occasionally. Fry the cheese in 1 tablespoon of hot oil for 2 minutes on each side. Remove the cheese, halve diagonally, and serve with the tomatoes. Pour the salad dressing over the cheese. Arrange the skewers on top. Serve with tzatziki and bread.
