Soybean sprout salad

Ingredients for 2 servings:

  • 450 g sprouts (soybean sprouts), fresh
  • 1 tsp salt
  • 2 ½ liters of water
  • 2 tbsp soy sauce, light
  • 1 tbsp vinegar
  • 2 spring onions, finely sliced
  • 1 tbsp oil (sesame oil)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the bean sprouts in cold water, remove any foreign matter floating on the surface, and drain the sprouts. Blanch the bean sprouts in a pot of salted, boiling water, then cool in a sieve under cold running water and drain. Transfer the sprouts to a bowl, add soy sauce, vinegar, and sesame oil, and garnish with spring onion sticks just before serving.
