Sweet and sour cucumber salad

Ingredients for 3 servings:

  • 1 cucumber(s)
  • 2 tsp fresh ginger, finely chopped
  • 1 tsp oil (sesame oil)
  • 2 tbsp sugar
  • 2 tbsp vinegar (rice vinegar)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

It’s best to use a slender, dark-green cucumber, as light green ones contain too much water and lack flavor. Halve the cucumber lengthwise, slice each half, and marinate in a mixture of ginger and sesame oil for 10-15 minutes. Mix the sugar and rice vinegar until the sugar dissolves and pour over the cucumber slices. Mix well and enjoy.
