Spread the love

Ingredients for 3 servings:

  • 300 g flour or 2/3 light flour and 1/3 spaetzle flour
  • 3 eggs
  • 150 ml milk mixed with water, half and half
  • Salt
  • 50 g butter
  • possibly cheese, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with milk

Whisk together the flour, eggs, and 3/4 teaspoon of salt. Gradually add the milk water while stirring until the dough bubbles. Let it rest for 30 minutes. Whisk again with an electric whisk. Bring a pot of water and salt to a boil. Scrape the dough into the boiling water either by hand using a spatula and a wooden board, or use a spaetzle board or a spaetzle press. As soon as the spaetzle float to the top, remove them with a slotted spoon and place them in a sieve. Rinse briefly with cold water and drain well. Then spread them out on a clean kitchen towel and let them dry for about 1-2 hours. Melt the butter in a pan and fry the spaetzle over medium heat until they develop a light crust. If you like, you can make Kässpatzen (cheese spaetzle) and add cheese as desired.
