Ingredients for 4 servings:

  • 750 g potatoes
  • 600 g tomatoes
  • 2 spring onions
  • 1 garlic clove(s)
  • 1 piece(s) ginger, fresh
  • 2 tbsp oil
  • 1 tsp curry
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

slightly Asian-inspired

Peel the potatoes and boil in salted water until just tender, then slice. Slice the tomatoes. Cut the green parts of the spring onions into 3 cm pieces and the white parts into thin rings. Finely chop the garlic. Peel and finely grate the ginger. Briefly fry the onion rings and garlic in hot oil. Add the potatoes, tomatoes, and ginger, sprinkle with curry, and season with salt and pepper. Fry for a few minutes, stirring constantly. Serve sprinkled with the green parts.
