Spaetzle with Quark
The perfect spaetzle with quark recipe with a picture and simple step-by-step instructions.
- 250 g Quark
- 250 g Wheat flour (405)
- 50 g Durum wheat semolina
- 2 piece Chicken eggs
- 150 ml Milk
- 2 tsp Sea-Salt
- 0,5 tsp Turmeric
- 1 tsp Butter
- For this ingenious spaetzle, put all the ingredients except the butter in the bowl of your food processor and let everything stir for 10 minutes on a high level. If you want to burn a few calories in advance, you can stir the dough by hand. It is important that a tough and even mass is created.
- Put on a large pot of water and bring it to a boil. As soon as the water boils, add a good pinch of salt.
- Now you can either scrape the spaetzle into the water with a board and a knife, press it into the water with a spaetzle press or, like me, use a spaetzle slicer.
- As soon as the spaetzle are in the water, let them boil for about 5 minutes and then pour them out through a sieve. Rinse the spaetzle properly with hot water to wash away the starch. Let them drain well, add the butter and a pinch of salt and stir the spaetzle until the butter is completely melted. Now it can be served. Delicious!
